A blood chorizo of pork, earthy onion, smoked paprika, garlic, and oregano, with some Pedro Ximinez sherry to add the luxe. Difficult to describe, and so difficult to stop slicing. The sweet of the onion, the sharpness of the salami itself, the slight waft of smoke, the richness of the pimenton all go beautifully with a dry Oloroso. or a cold beer, or just a 5 minute break. About the same size as a pork banger
