Pasture fed after the first six weeks (too wee to go out into the fields before then) and that gorgeous beta-carotene comes through in the soft buttery fat

Cured in UK sea salt, rinsed and then simply smoked over oak. A lovely complement to our Air Dried Ham on a charcuterie board
